Modified Bikes

I've been watching some videos, and for the most part, the bikes differ from the original PCJ. How can I change my bike, what tool's do I need, ect.

There are, or were, a few tutorials hanging around a little while ago, you basically need to edit the pcj600.txd file found inside your Rockstar Games/GTA VC/models/gta3.img file, you can extract it from there using IMGTool.  Basically use Photoshop or a similar photo editing program to change the look of the bike, here is bj's small tutorial to get you started:
