Thats a good question, and unfortunately one I don't know the answer to. It was something I looked into doing quite a while ago - when I was doing my intro for Found, where I wanted to have a plane crashing. At that time I was unable to find a way to do it (don't recall spending too much time looking though, so its certainly possible that there are ways to do it out there), so I just resorted to recording a plane going left-to-right (as they normally do) and rotating it by 90 degrees.

There's a C3 in the early stages of nutting out, yeah. With themed vids on my agenda lately, and a crew vid in the early works though, I'll be laying off C3 for just a scooch longer.

@KJ: The flight paths are all in the flight.dat files in your data/paths directory. It's actually not terribly hard to alter the flight paths, so long as you can gather up your preferred co-ords. These work for the visible planes in flight, but I'm not 100% sure about the trails. There is one flight.dat file with co-ords whose Z axis never drops below 80 (so the plane never lands)...so that may be the one you're after. Tinker around...find your co-ord where you spawn in game, change one of the co-ords in whichever flight.dat file you're toying with to your spawn co-ord and wait to see what happens.
