1440p size this time? Ubiquity's bitrate was already overkill for a GTA video imo. Would ya go for an even higher one at such a resolution? How about a HEVC render?

1440p for sure, I use constant a rate factor in my x264 settings (crf 18) which means I'm letting x264 decide what bitrate is needed to keep the quality less than a 18% loss compared to the source and again I'm letting x264 even at that resolution, don't like it then download the 720p.
Different colors needs different compression and red's are the hardest one to compress without quality loss which Ubiquity (and the new one) has a lot of thus it needs more bitrate than videos with lesser 'reds' in them.
As for a HEVC (x265) encode, I'd like to do that, however 1. I need to familiarize myself with the codec first and then 2. the codec needs to be developed enough to in "bitrate required for the same quality vs processing power needed for decoding" equation.
