lol, the best method I've found (thank you Nitz ) is to lean back as you are about to hit the bump, just like a normal small bump. If the roof is significantly higher than the Packer, lean back when your front wheel is nearly touching the bump.

Stunting with out peds on PS2 (part 1) - More ways on how to do this coming soon.
Shows how to get rid of peds during any time during VC and try stunts with out people in the way.
DO NOT do this trick while on a mission. It will crash your PS2.
